Butter Chicken

Ingredients

  • 800g chicken thigh fillets, trimmed and sliced into strips
  • 1 tablespoon olive oil
  • 2 diced onions
  • Potato chunks
  • 4 sliced mushrooms
  • 2 tbs butter
  • 1 tbs grated fresh ginger or minced ginger
  • 1 tbs minced garlic
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp garam masala
  • 1/4 tsp chilli powder
  • 1 cup of tomato puree
  • 300ml Light Sour Cream
  • 1/4 cup toasted flaked almonds, and coriander leaves - to serve

Method

1. Select FRY program. Set TIME for 15 minutes. Press START.
2. Add oil to the inner pot and allow heating for approximately 5 minutes with lid closed. Add butter and cook .the chicken until browned, remove to a plate. Cook remaining half and put with 1st batch.
3. Add remaining butter. Add onions, mushrooms, ginger, garlic and cook for one minute. Add coriander, cumin, garam masala, chilli powder and stir for 30 seconds.
4. Add tomato puree and a pinch of salt and simmer for 10 minutes.
5. Return chicken to pot with Sour cream and potatoes and combine well.
6. Select SLOW COOK program. Set TIME 1 hour. Press START.
7. Serve when ready with Basmati Rice and Naan Bread.
